Freeze and make ahead keto hot pockets for future lunches or dinners. These beef and cheddar pockets are perfect with keto BBQ sauce.

Ingredients
  

  • 2 cups Shredded Cheddar Cheese divided
  • 2 ounces Cream Cheese
  • 1 cup Almond Flour
  • 1 large Egg
  • 1/4 tsp Xanthan Gum
  • 1/2 tsp Baking Powder
  • 1/2 tsp Italian Seasoning
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 6 ounces Chopped Beef Brisket
  • 1/4 cup Sugar-Free BBQ Sauce

Instructions
 

  • Preheat your air fryer to 375 degrees.
  • In a bowl that is microwave safe, place the 1 ½ cups of the cheddar cheese and the cream cheese. Microwave for 30 second intervals until completely melted and combined.
  • Add the cheese mixture to a mixing bowl with the almond flour, egg, baking powder, xanthan gum, garlic powder, onion powder and Italian seasoning. Blend to combine well into a dough.
  • Flatten the dough between two pieces of parchment paper until it is about ¼ of an inch thick.
  • Use a small tupperware container or large cookie cutter to cut out square or circular shapes in the dough.
  • Place some of the chopped beef, more shredded cheese and a dollop of bbq sauce on one side of each square of dough.
  • Fold the other side of the dough over the filling, and crimp the edges closed with the tines of a fork.
  • Air fry for 5 minutes per side, until golden brown and crispy.
