Keto Pumpkin Mousse

Equipment

  • 8 Small Plastic Cups 2 ounce size
  • Mixing Bowl
  • Black Permanant Marker

Ingredients
  

  • 8 oucnes Cream Cheese softened
  • 1 cup Pumpkin Puree
  • 1 cup Brown Sugar Swerve
  • 2 tsp Pumpkin Pie Spice
  • 1/2 cup Heavy Whipping Cream
  • 1/4 cup Swerve Confectioner's Sugar Substitute

Instructions
 

  • Draw Jack O Lantern faces on the front of the small clear cups with a Sharpie.
  • In a mixing bowl, combine the cream cheese, pumpkin puree, brown sugar Swerve and pumpkin pie spice until smooth and creamy.
  • Add the pumpkin mixture to a piping bag or a Ziploc with the tip of the bag cut off, and pipe the mixture into the cups until they are full.
  • Combine the heavy whipping cream and confectioners sugar substitute in a mixing bowl, and beat until soft peaks form.
  • Pipe the whipping cream onto the top of each pumpkin mousse jack o lantern and serve.
