Low-Carb Lime Frosted Coconut bars

Whip up a batch of copycat Starbucks lime frosted coconut bars. These are gluten-free and keto-friendly and so good for you!

Ingredients
  

Almond Flour Crust

  • 1 large Egg
  • 1 1/4 cup Almond Flour
  • 8 tbsp Butter softened
  • 1/2 tsp Baking Powder
  • 1/2 cup Swerve Brown Sugar Substitute
  • 1 tsp Vanilla Extract
  • 1/4 tsp Coconut Extract
  • 1/3 cup Unsweetened Coconut Flakes
  • 1/4 cup Keto White Chocolate Chips

Sugar-Free Lime Frosting

  • 1 1/4 cups Swerve Confectioner's Sugar Substitute
  • 3 tbsp Heavy Whipping Cream
  • 8 tbsp Butter softened
  • Juice from one lime
  • Green food coloring optional

Instructions
 

  • Preheat the oven to 350 degrees, and grease a 9x9 baking dish well.
  • Blend together the ingredients for the crust with the exception of the white chocolate chips.
  • Place the white chocolate chips into a bowl that is microwave safe, and heat at 30 seconds intervals until completely melted.
  • Once the ingredients are blended well, beat in the white chocolate chips until well combined.
  • Press the crust into the bottom of the prepared baking dish.
  • Bake for 15 minutes, and allow to cool.
  • Once the crust has cooled, blend together the ingredients for the frosting until smooth and creamy. Add the heavy whipping cream a little at a time, and add only enough to reach your desired consistency.
  • Add a few drops of green food coloring to the frosting if desired.
  • Spread the frosting over the cooled crust, and chill until set and ready to slice.
