Low-Carb Honey Garlic Shrimp Skewers

Ingredients
  

  • 1 pound Raw Colassal Shrimp peeled and deveined
  • 1/4 cup Olive Oil
  • 2 Lemons zested and Juiced
  • 4 tbsp Minced Garlic
  • 1 tbsp Sugar-Free Honey
  • Salt and Pepper to taste
  • 1 tbsp Fresh Chopped Parsley

Instructions
 

  • In a bowl, mix together the olive oil, lemon zest, lemon juice, garlic, honey, salt, and black pepper. Place the shrimp into the marinade and stir gently.
  • Cover the bowl and refrigerate for 1 hour.
  • When ready to cook, preheat the oven to 450 degrees. Prepare a large rimmed baking sheet with parchment paper or aluminum foil.
  • Thread the shrimp on bamboo skewers. Two to three shrimp will fit on each strip. Discard the remaining marinade.
  • Place the shrimp skewers on the prepared baking sheet. Bake for 4 to 6 minutes, flipping halfway and basting in the juices.
  • Prior to serving, brush the skewers with any remaining pan juices.
  • Sprinkle with parsley. Serve with fresh lemon slices.
