In a bowl, mix together the olive oil, lemon zest, lemon juice, garlic, honey, salt, and black pepper. Place the shrimp into the marinade and stir gently.
Cover the bowl and refrigerate for 1 hour.
When ready to cook, preheat the oven to 450 degrees. Prepare a large rimmed baking sheet with parchment paper or aluminum foil.
Thread the shrimp on bamboo skewers. Two to three shrimp will fit on each strip. Discard the remaining marinade.
Place the shrimp skewers on the prepared baking sheet. Bake for 4 to 6 minutes, flipping halfway and basting in the juices.
Prior to serving, brush the skewers with any remaining pan juices.
Sprinkle with parsley. Serve with fresh lemon slices.
