Ingredients
  

Keto Italian Chicken

  • 1 1/2 pounds Boneless Skinless Chicken Breasts cut into pieces
  • 1 tbsp Olive Oil
  • 1/2 tsp Oregano
  • 1/2 tsp Basil
  • 1/2 tsp Rosemary
  • 1/4 tsp Onion Powder
  • 1 tsp Minced Garlic
  • Squeeze Fresh Lemon Juice

Red Wine Vinaigrette

  • 1/4 cup Parmesan Cheese grated
  • 4 tbsp Olive Oil
  • 1 1/2 tbsp Red Wine Vinegar
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Dijon Mustard

Instructions
 

  • Preheat the oven to grill to 400 degrees.
  • Place the chicken pieces in a bowl and season with salt and pepper to taste.
  • Drizzle with the olive oil.
  • Sprinkle with the remaining seasonings, and a squeeze of fresh lemon juice.
  • Toss to coat the chicken well.
  • Place the chicken pieces onto the wooden skewers.
  • Add the chicken skewers to the grill, or onto a baking sheet if using the oven.
  • Grill or bake the chicken for 15-20 minutes until cooked through.
  • In a bowl, combine the sauce ingredients until smooth.
  • Drizzle with the sauce, or use it for dipping if preferred.
