Bake or grill these Italian chicken skewers. The included red wine vinaigrette is the perfect sauce for dipping - and it's all low-carb!

Keto Italian Chicken
- 1 1/2 pounds Boneless Skinless Chicken Breasts cut into pieces
- 1 tbsp Olive Oil
- 1/2 tsp Oregano
- 1/2 tsp Basil
- 1/2 tsp Rosemary
- 1/4 tsp Onion Powder
- 1 tsp Minced Garlic
- Squeeze Fresh Lemon Juice
Red Wine Vinaigrette
- 1/4 cup Parmesan Cheese grated
- 4 tbsp Olive Oil
- 1 1/2 tbsp Red Wine Vinegar
- 1/4 tsp Garlic Powder
- 1/2 tsp Dijon Mustard
Preheat the oven to grill to 400 degrees.
Place the chicken pieces in a bowl and season with salt and pepper to taste.
Drizzle with the olive oil.
Sprinkle with the remaining seasonings, and a squeeze of fresh lemon juice.
Toss to coat the chicken well.
Place the chicken pieces onto the wooden skewers.
Add the chicken skewers to the grill, or onto a baking sheet if using the oven.
Grill or bake the chicken for 15-20 minutes until cooked through.
In a bowl, combine the sauce ingredients until smooth.
Drizzle with the sauce, or use it for dipping if preferred.
