Keto Loaded Cauliflower Mash

It's the perfect side dish for every meal! Loaded cauliflower mash is creamy and tastes just like loaded mashed potatoes.

Ingredients
  

  • 1 large Head of Cauliflower
  • 4 slices Bacon cooked and crumbled
  • 2 ounces Cream Cheese softened
  • 2 tbsp Dried Chives
  • 2 tbsp Green Onions chopped
  • 1 tsp Garlic minced
  • 1 cup Cheddar Cheese shredded
  • 3 tbsp Butter softened

Instructions
 

  • Cut the cauliflower into florets, and boil until crisp tender. Rinse under cold water and drain well.
  • Preheat the oven to 400 degrees.
  • Add the cauliflower, butter, cream cheese, chives, minced garlic and salt and pepper to taste to a blender or food processor. Blend until smooth.
  • Spread the cauliflower mash into a greased casserole dish, and top with the cheese and bacon.
  • Bake for about 5 minutes, or until the cheese melts.
  • Garnish with green onions and serve.
