Keto Broccoli Cheddar Soup

- 2 tbsp Butter
- 1/2 Onion chopped
- 2 tsp Minced Garlic
- 3 ounces Cream Cheese softened
- 4 cups Chicken Broth
- 3 cups Broccoli Florets
- 1 tsp Paprika
- 1 cup Heavy Whipping Cream
- 1 1/2 cup Shredded Cheddar Cheese
Melt the butter in a pot over medium heat.
Add the onions to the pot, and saute until tender.
Mix in the garlic, and saute another minute.
Stir in the cream cheese until melted.
Whisk the chicken broth into the pot.
Bring the mixture to a boil, and then add in the broccoli.
Cover and simmer until the broccoli begins to soften.
Add heavy whipping cream and stir until combined.
Mix in the paprika and cheddar cheese until the cheese has melted completely.
Season with salt and pepper to taste and serve.
