Keto Broccoli Cheddar Soup

This is a classic soup that kids can't get enough of! Cheesy, thick, and full of healthy broccoli florets, broccoli cheddar soup is a winner!

Ingredients
  

  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 2 tsp Minced Garlic
  • 3 ounces Cream Cheese softened
  • 4 cups Chicken Broth
  • 3 cups Broccoli Florets
  • 1 tsp Paprika
  • 1 cup Heavy Whipping Cream
  • 1 1/2 cup Shredded Cheddar Cheese

Instructions
 

  • Melt the butter in a pot over medium heat.
  • Add the onions to the pot, and saute until tender.
  • Mix in the garlic, and saute another minute.
  • Stir in the cream cheese until melted.
  • Whisk the chicken broth into the pot.
  • Bring the mixture to a boil, and then add in the broccoli.
  • Cover and simmer until the broccoli begins to soften.
  • Add heavy whipping cream and stir until combined.
  • Mix in the paprika and cheddar cheese until the cheese has melted completely.
  • Season with salt and pepper to taste and serve.
