Low-Carb Irish Pork Stew

Using turnips instead of potatoes, this hearty Irish pork stew is low-carb, zesty, and easy to make completely gluten-free.

Ingredients
  

  • 4 tbsp Butter
  • Salt and Pepper to taste
  • 2 pounds Boneless Pork Shoulder cut into pieces
  • 2 cups Mushrooms
  • 1 medium Carrot chopped
  • 2 Turnips peeled and chopped
  • 1/2 Onion chopped
  • 2 Bay Leaves
  • 1 cup Guinness
  • 2 cups Beef or Chicken Broth
  • 2 tsp Caraway Seeds
  • 1/3 cup Chopped Celery
  • 2 tsp Minced Garlic
  • Parsley for garnish

Instructions
 

  • Melt 2 Tbsp of the butter in a large pot over medium high heat. 
  • Working in two batches, season the pork pieces with salt and pepper to taste, and sear on all sides in the pot. Set aside. 
  • To the same pot, reduce the heat to medium and add the remaining butter. 
  • Stir in the mushrooms, carrots, onions, celery and turnips. Season with salt and pepper to taste, and saute for 4-5 minutes. 
  •  Mix in the garlic, and saute another 30 seconds. 
  • Add the caraway seeds, bay leaves, Guinness, broth and meat into the skillet. 
  • Bring to a boil, then cover, reduce the heat to medium low and simmer until the turnips are softened and meat is cooked through, about 20-30 minutes. 
  • Serve garnished with chopped parsley.
