Keto Chicken and Roasted Cauliflower Stir Fry

Ingredients
  

  • 3 cups Cauliflower Florets cut into smaller pieces
  • 1 1/2 pounds Boneless Skinless Chicken Breasts cut into pieces
  • 4 tbsp Olive Oil
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Sesame Oil
  • 1/2 Onion chopped
  • 1 1/2 cups Frozen Keto-Friendly Stir Fry Vegetables
  • 1/4 cup Bean Sprouts
  • 1/4 cup Chopped Green Onions
  • 2 tsp Minced Garlic
  • 2 tsp Sugar-Free Honey
  • Salt and Pepper to taste
  • Sesame Seeds for garnish

Instructions
 

  • Preheat the oven to 375 degrees.
  • Add the cauliflower to a mixing bowl, and drizzle with one tablespoon of the olive oil.
  • Sprinkle the cauliflower with the onion powder, garlic powder and salt and pepper to taste.
  • Spread the mixture over a parchment lined baking sheet, and bake for 15-20 minutes, or until done to your liking.
  • While the cauliflower is roasting, heat two tablespoons of oil in a large skillet over medium high heat.
  • Add in the chicken, and season with salt and pepper to taste. Saute until the chicken is browned and cooked through. Remove and set aside.
  • Heat the remaining olive oil and the sesame oil in the skillet over medium heat.
  • Mix in the onions and stir fry vegetables, and saute until tender.
  • Stir in the garlic, sugar free honey and bean sprouts into the skillet, and saute for another 30 seconds.
  • Pour the chicken and cauliflower into the skillet, and drizzle the stir fry sauce on top of the ingredients. Stir to combine everything well.
  • Saute another 3-4 minutes.
  • Garnish with green onions and sesame seeds before serving.
