Keto Meatloaf Roll Ups

Dinner is super fun with this finger food idea! Keto meatloaf roll ups are fun for both kids and adults - and only 2 grams net carbs each!

  • 9x9 Baking Dish
  • Baking Sheet
  • Parchment Paper
  • Knife

Ingredients
  

  • 1 pound Ground Beef
  • 3 tbsp Sugar-Free Ketchup
  • 1/4 cup Chopped Onion
  • 1/2 tsp Garlic Powder
  • 1/4 cup Chopped Parsley
  • 1 large Egg
  • 1 cup Crushed Pork Rinds
  • 2 cups Shredded Mozzarella Cheese

Instructions
 

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, add all of the ingredients except for the shredded mozzarella. Knead with your hands until well combined.
  • Press the mixture down into a well greased 9x9 baking dish.
  • Bake for 30 minutes, or until cooked through. Drain any excess grease.
  • Raise the oven temperature to 400 degrees, and cover a baking sheet with parchment paper.
  • Spread the cheese out on the baking sheet into 8 circular shapes. Bake for 6-8 minutes until the edges of the cheese circles are beginning to brown.
  • Remove, and let the cheese cool for a minute or two.
  • Slice the meat mixture into 8 evenly sized rectangles.
  • Place a strip of the meat mixture in the center of each cheese circle, and carefully fold the edges of the cheese up and over the filling.
  • Let the rollups cool down, and serve with extra sugar free ketchup for dipping.
