    Dinner is super fun with this finger food idea! Keto meatloaf roll ups are fun for both kids and adults – and only 2 grams net carbs each!

    Very few recipes are as classic as good old meatloaf! In fact, I love it so much that I even made an easy low-carb air fryer meatloaf. The combination of spices with the juicy and tender ground beef, all topped with a sweet ketchup glaze – it really can’t be beat. 

    Keto Meatloaf Roll Ups

    I took this childhood favorite and turned it into finger food! These little meatloaf roll ups are a crowd-pleaser. Kids love picking up and dunking them in ketchup. If you are looking for a fantastic recipe to make for your family, this is it! 

    Meatloaf Appetizer 

    You can even slice the roll-ups smaller, insert a toothpick, and serve them as appetizers at your next party.  I love serving keto recipes at parties because they are almost always gluten-free, which is fantastic for anyone with food allergies.

    Since these taste best when they are served warm, I suggest keeping them in the oven at low heat until your guests are ready to eat them. 

    Keto Appetizer 

    Another reason I love to make keto-friendly appetizers is because then I will know for sure there are little things at the party that I can eat. There are just 2 grams net carbs per roll up, so you’ll have enough macros leftover to enjoy a sugar-free cocktail too!

    Even if you aren’t going to a party (or hosting one) anytime soon, these meatloaf bites are one of my favorite things to eat for lunch too. If you don’t want to get your fingers sticky, you can wrap them up in a piece of lettuce.

    To keep them fresh for your meal prep this week, I suggest storing them in an airtight food storage container for no longer than 3 days. After three days the quality just isn’t the same. 

    Meatloaf For Kids 

    I don’t always serve my kids keto recipes, but there are some things I make that they ask for – and this is one of them. They loved these meatloaf bites and I bet your kids will too. 

    Keto Meatloaf Roll Ups

    Anything that is made in small little sizes that fit in their hands, they love! These keto sausage egg and cheese bites are pretty popular with my kids too. And what kids wouldn’t like strawberry white chocolate bark? They can’t even tell it is sugar-free. 

    Keto Meatloaf Roll Ups Recipe 

    Here’s the list of ingredients that you’ll need to make these keto meatloaf roll ups. Exact measu

    Prep Time: 20 minutes
    Cook Time: 35 minutes
    Servings: 8
    Net Carbs: 2 net carbs per serving

    Ingredients:

    Ground beef
    Sugar free ketchup
    Onion
    Garlic powder
    Parsley
    Egg
    Crushed pork rind crumbs
    Salt and pepper 
    Shredded mozzarella cheese
    Extra sugar free ketchup for dipping

    Instructions:

    Preheat the oven to 350 degrees.

    In a mixing bowl, add all of the ingredients except for the shredded mozzarella. Knead with your hands until well combined.

    Press the mixture down into a well greased 9×9 baking dish.

    Bake for 30 minutes, or until cooked through. Drain any excess grease.

    Raise the oven temperature to 400 degrees, and cover a baking sheet with parchment paper.

    Spread the cheese out on the baking sheet into 8 circular shapes. Bake for 6-8 minutes until the edges of the cheese circles are beginning to brown.

    Remove, and let the cheese cool for a minute or two.

    Slice the meat mixture into 8 evenly sized rectangles.
    Place a strip of the meat mixture in the center of each cheese circle, and carefully fold the edges of the cheese up and over the filling.

    Let the rollups cool down, and serve with extra sugar free ketchup for dipping.

    • 1 large Egg
