Kids love these cute Jack O Lantern Stuffed Peppers. They are the cutest and healthiest things to make for a Halloween lunch or party.

- 4 Orange Bell Peppers
- 1 pound Ground Beef
- 1 cup Cauliflower Rice cooked `
- 1/2 Onion chopped
- 1 tsp Italian seasoning
- 1 tsp Garlic minced
- 1/2 cup Mozzarella Cheese shredded
Preheat the oven to 350 degrees.
Remove the tops from the bell peppers, and remove the seeds.
Using a sharp knife, cut the face of a Jack O Lantern into the side of each bell pepper.
In a mixing bowl, combine all of the ingredients except the mozzarella cheese.
Stuff the peppers with the meat mixture.
Top with the mozzarella cheese.
Bake for 25 minutes, or until the meat is cooked through.
