Ingredients
  

  • 4 Orange Bell Peppers
  • 1 pound Ground Beef
  • 1 cup Cauliflower Rice cooked `
  • 1/2 Onion chopped
  • 1 tsp Italian seasoning
  • 1 tsp Garlic minced
  • 1/2 cup Mozzarella Cheese shredded

Instructions
 

  • Preheat the oven to 350 degrees.
  • Remove the tops from the bell peppers, and remove the seeds.
  • Using a sharp knife, cut the face of a Jack O Lantern into the side of each bell pepper.
  • In a mixing bowl, combine all of the ingredients except the mozzarella cheese.
  • Stuff the peppers with the meat mixture.
  • Top with the mozzarella cheese.
  • Bake for 25 minutes, or until the meat is cooked through.
