Jack O Lantern Stuffed Peppers
One of the best ways to make kids excited to eat healthy foods is to make them fun to look at. As you carve pumpkins and hang up spooky decorations, put these jack o lantern stuffed peppers on the weekly menu.
It’s really easy to customize this recipe to suit your kid’s favorite flavors. I used orange bell peppers because they look the most like pumpkins. Honestly, any color of bell peppers will work perfectly too.
Halloween Stuffed Peppers
Filling the stuffed peppers is easy for kids. You might have to carve the face into the peppers for your kids. After you remove the seeds and cut out the eyes and face in the peppers, let your kids fill them with their favorite fillings.
I didn’t flavor the ground beef at all while I browned it but try sprinkling some taco seasoning on it while it cooks. This will make the peppers taste incredible.
Stuffed Peppers For Kids
I filled our stuffed peppers with cauliflower rice because I’m still on the keto diet and love adding more veggies to my kids’ diet whenever possible.
If your children or family aren’t on the keto diet, fill their peppers with brown rice. It’s a whole grain and fantastic for their digestive health.
Another way to make stuffed peppers more attractive to kids is to make them extra cheesy! Use as much cheese as you want. There really isn’t such a thing as too much cheese in these peppers.
Keto Stuffed Peppers
These keto stuffed peppers are an entire meal. You have tons of veggies and meat that all cook together.
Add some healthy recipes to the side with them. Add some whipped sweet potatoes or roasted carrots for kiddos who are not on the keto diet.
A few keto-friendly side dishes like mashed cauliflower and pumpkin and keto garlic knots will taste delicious with these stuffed peppers.
Healthy Stuffed Peppers
I baked them in the oven, which gives them a caramelized texture and melts everything beautifully. You can also make them in the air fryer!
To make stuffed peppers in the air fryer, place them in the basket, leaving plenty of room in between the peppers. Set the air fryer to 375F and air fry them for about 20 minutes.
Check on them after 15 minutes since every air fryer is different.
Store leftover stuffed peppers in an airtight container in the refrigerator for up to three days. I suggest reheating them in the oven or air fryer since the microwave will soften them too much.

Onion

Mozzarella cheese shredded
Instructions:
Preheat the oven to 350 degrees.
Remove the tops from the bell peppers, and remove the seeds.
Using a sharp knife, cut the face of a Jack O Lantern into the side of each bell pepper.
In a mixing bowl, combine all of the ingredients except the mozzarella cheese.
Stuff the peppers with the meat mixture.
Top with the mozzarella cheese.
Bake for 25 minutes, or until the meat is cooked through.
