Ingredients
  

  • 2 pounds Ground Turkey
  • 1 cup Pork Rinds crumbed
  • 1 large Egg
  • 2 cups Shredded Mozzarella Cheese divided
  • 1/2 cup Parmesan Cheese, grated divided
  • 1 tsp Italian Seasoning
  • 2 tsp Minced Garlic
  • 1 tsp Onion Powder
  • 1 cup Ricotta Cheese
  • 1 cup Low-Carb Marinara Sauce

Instructions
 

  • Preheat the oven to 350 degrees.
  • Layer the marinara sauce in the bottom of a 9x13 baking dish.
  • In a large mixing bowl, knead together the ground turkey, pork rind crumbs, egg, 1 cup of the mozzarella cheese, ¼ cup of the Parmesan cheese, Italian seasoning, minced garlic, onion powder and salt and pepper to taste.
  • Form the mixture into evenly sized meatballs, and line them in the baking dish on top of the sauce.
  • Spread the ricotta cheese over the meatballs.
  • Top the meatballs with the remaining mozzarella cheese and parmesan cheese.
  • Bake for 20-25 minutes. Let sit for 10 minutes before serving.
