With three different types of cheese, this cheesy keto meatball casserole is a no-fail family dinner. It’s even perfect for parties.
Kid-Friendly Meatballs
If you make food cheesy and in fun shapes, my kids will probably eat it. These meatballs are super popular with kids because they are filled with melted cheese and covered in a zesty sugar-free marinara sauce.
The most time consuming part of this recipe is rolling the meatballs.
You can save yourself time by pre-rolling the meatballs the night before. Then, all you have to do is fill your baking dish with the sauce and top the meatballs with the rest of the cheese, and then bake it!
Easy Family Casserole
This casserole reminds me of lasagna, but without the noodles. You still have the ground turkey, marinara sauce, and ricotta cheese. If you wanted to serve this on top of your favorite keto-friendly noodles, it will taste incredible.
Do you have kids that love to learn how to cook? Let them dig in and roll the meatballs with you. Use an ice cream scoop to portion the meatballs perfectly. This way, they will all be the same size and will cook evenly.
Gluten-Free Meatballs
The secret to keeping the meatballs ket0-friendly and gluten-free is to use pork rinds instead of bread crumbs. Crush the pork rinds up into tiny pieces. This is another fun task for the kiddos.
Place the pork rinds inside a resealable plastic bag. Then, use a rolling pin to crush the pork rinds into the crumbs.
I used ground turkey, but you can replace that with ground beef, ground sausage, or a combination of all three. I don’t recommend using ground chicken because it doesn’t have enough fat in it and won’t hold together as well.
What To Eat With Meatballs
These meatballs are extremely cheesy and covered in a delicious marinara sauce. Serve this casserole with your favorite keto-friendly rolls or biscuits. These bacon and cheese biscuits are the perfect things to use to dip into the sauce.
If you are feeding a large family, then make some loaded cauliflower mash. It’s a really filling side dish that is filled with even more cheese.
A chopped salad with a sugar-free dressing is also a wonderful choice with this cheesy keto meatball casserole.
Keto Meatball Casserole
These meatballs are fantastic to use in your meal prep (or your kid’s school lunch). Store leftover baked meatballs in an airtight container in the refrigerator for up to three days.
Reheat them in the oven or in the microwave.
