Egg Loaf French Toast

No wonder my kids love this recipe so much! This egg loaf French toast is fluffy, sweet, and full of cinnamon goodness.

Ingredients
  

Egg Loaf

  • 8 oucnes Cream Cheese softened
  • 7 large Eggs
  • 1/4 cup Heavy Whipping Cream
  • 4 tbsp Butter melted
  • 1 tsp Vanilla Extract
  • 1/3 cup Swerve Confectioner's Sugar Substitute
  • 2 tsp Baking Powder
  • 1/3 cup Coconut Flour

French Toast

  • 2 large Eggs
  • 3 tbsp Heavy Whipping Cream
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon
  • 1 pinch Nutmeg

Instructions
 

  • Preheat the oven to 350 degrees, and grease a loaf pan well.
  • Add the cream cheese to a mixing bowl, and beat until creamy.
  • Place the remaining ingredients for the egg loaf into the mixing bowl, and blend until the batter is completely smooth.
  • Pour the batter into the loaf pan, and bake for 50-55 minutes. You can tent a piece of tin foil over the top of the egg loaf if the top starts to get too brown.
  • Remove the egg loaf from the oven, and allow to cool to room temperature. Turn the loaf out of the pan.
  • Slice the egg loaf into 8 even slices.
  • In a shallow bowl, whisk together the ingredients for the french toast.
  • Dip the egg loaf slices into the french toast mixture, coating them well.
  • Place a large skillet over medium heat on the stove, and spray with cooking spray.
  • Add the coated slices to the heated skillet, and cook evenly on both sides until browned and crispy on the outside.
  • Serve with butter, syrup and your choice of other toppings.
