    What Is Egg Loaf

    An egg loaf is a spongy and delicious way to make bread that is high-fat and low-carb. The main ingredients in egg loaf are cream cheese and eggs.

    You can use this bread recipe to make sandwich bread, or toast. You can also let it dry out and then make your own croutons from it. It’s as versatile as white bread, but I think it’s tastier than white bread.

    The wonderful thing about this French toast is that the dip for the bread is seasoned with vanilla extract, cinnamon, and nutmeg. This makes the French toast so flavorful that you’ll it with or without the syrup.

    In fact, I like to make this French toast when I’m too busy to sit down and eat breakfast. I can take this bread with me out the door.

    You can also just toast the egg loaf instead of making French Toast. Then, top it with fried eggs and bacon and you have a delicious and low-carb breakfast sandwich.

    You can make many different variations to this simple recipe to make it taste exactly how you want it to.

    When you make this French Toast, it’s best to cut the egg loaf into thick slices. It won’t fry if you try to use thinner slices.

    Since there is a sweetener in the egg loaf, you don’t need to add any sweetener to the French Toast dip. Some people like to sweeten it with a granulated sugar substitute, but I think it makes the French Toast too sweet.

    You can try it with some sugar and see how you like it.

    You can also make Pumpkin Spice French Toast! Just sprinkle some pumpkin pie spice instead of cinnamon and nutmeg. It will be really aromatic and taste just like fall!

    The toppings is the best part of the French Toast! Sprinkle some confectioner’s sugar substitute on top and add some berries.

    If you made pumpkin spice French Toast, spread a little bit of pumpkin puree on top.

    I like to spread a little peanut butter or almond butter on top for a little extra protein. The saltiness from the  nut or seed butters add a wonderful contrast to the sweet French Toast.

    Yes, you can freeze egg loaf. Make a few loaves all at once and then add the extras to the freezer so you can enjoy it later. To freeze it, let it cool to room temperature first.

    Then wrap each loaf in aluminum foil and place it in a resealable freezer-safe food storage bag. The egg loaf will stay fresh in the freezer for up to six months.

    Ingredients:

    For the egg loaf:

    Cream cheese
    Eggs
    Heavy whipping cream
    Butter
    Vanilla extract
    Swerve confectioners sugar substitute
    Baking powder
    Coconut flour

    For the french toast:

    Eggs
    Heavy whipping cream
    Vanilla extract
    Cinnamon
    Nutmeg

    Instructions:

    Preheat the oven to 350 degrees, and grease a loaf pan well.

    Add the cream cheese to a mixing bowl, and beat until creamy.

    Place the remaining ingredients for the egg loaf into the mixing bowl, and blend until the batter is completely smooth.

    Pour the batter into the loaf pan, and bake for 50-55 minutes. You can tent a piece of tin foil over the top of the egg loaf if the top starts to get too brown.

    • 1/3 cup Coconut Flour
