Creamy Keto Chicken Cordon Bleu Casserole

Cubed chicken and ham are smothered in a creamy swiss and parmesan cheese sauce and topped with crunchy pork rinds. Perfect for dinner.

Ingredients
  

  • 3 cups Cubed Chicken Breast
  • 1 1/2 cups Cubed Ham
  • 2 tbsp Butter
  • 1/2 Onion chopped
  • 1 cup Heavy Whipping Cream
  • 1 tsp Dijon Mustard
  • 2 tsp Minced Garlic
  • 1 1/2 cups Shredded Swiss Cheese
  • 1/4 cup Parmesan Cheese grated
  • 1/2 cup Crushed Pork Rind Crumbs

Instructions
 

  • Heat the oven to 350 degrees, and grease a 9x13 baking dish well.
  • Layer the chicken and ham in the bottom of the baking dish.
  • Add the butter to a skillet over medium heat.
  • Saute the onions in the skillet until softened.
  • Stir in the garlic, and saute for 30 seconds longer.
  • Mix in the heavy whipping cream, dijon mustard and salt and pepper to taste.
  • Simmer until the sauce is thickened.
  • Stir in the shredded cheddar cheese until melted.
  • Pour the sauce over the meat in the casserole dish, and stir to combine.
  • In a bowl, mix together the pork rinds and Parmesan cheese.
  • Sprinkle the crumb mixture on top of the casserole.
  • Bake for 20 minutes.
  • Let sit for 5-10 minutes before serving.
