Keto Pizza Chicken Bites

Turn crispy chicken nuggets into tasty keto pizza bites! You don't need any almond or coconut flour - just ground chicken.

  • Parchment Paper

Ingredients
  

  • 1 pound Ground Chicken
  • 1 Egg
  • 1/4 cup Grated Parmesan Cheese Divided
  • 3/4 cup Ground Pork Rinds
  • 1 tsp Italian Seasoning
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Rao Pizza Sauce
  • 12 Mini Pepperonis

Instructions
 

  • Preheat the oven to 400 degrees F.
  • In a large bowl, mix together ground chicken, egg, italian seasoning, and ½ of the parmesan cheese.
  • In a separate bowl, stir together ground pork rinds and remaining parmesan cheese.
  • Form the chicken mixture into small nuggets, roll in the pork rind mixture, then place on a prepared baking sheet. (I used parchment paper for easy removal).
  • Bake for approximately 25-30 minutes, or until nuggets are slightly brown and the chicken is cooked through.
  • Remove from the oven, layer each with shredded mozzarella cheese, pepperoni and additional mozzarella.
  • Return to the oven for another 3-4 minutes, or until the cheese has melted.
