Have you heard of chicken pizza crust? You basically bake some finally-chopped canned chicken with parmesan cheese and an egg. Then, spread it out and bake it. It gets super-crispy and is the perfect texture to use as a keto pizza crust.
I took that idea and turned it around. As fun as that is, I thought that making some chicken nugget pizza bites would be even more enjoyable. I was right!
These crispy, juicy chicken nuggets are topped with cheese and pepperoni and the perfect size for dunking.
Chicken Pizza Bites
Serve chicken pizza bites with your favorite sugar-free marinara sauce. My favorite one is Rao’s pizza sauce. Always read the ingredients label and buy the ones that don’t have any added sugar in them.
You can even make your own pizza sauce. Heat up some tomato puree, chopped basil, garlic salt, and parsley. It’s so thick and flavorful!
Or serve them with some melted queso or sugar-free BBQ sauce. Have fun and dip them into your favorite sauces.
Pizza Nuggets
These little pizza nuggets are the perfect size to add to your child’s school lunch or your weekly meal prep. Store the dipping sauce in another container. They taste just as good cold as they do nice and hot.
Store keto pizza nuggets in an airtight container in the refrigerator for up to three days. After about three days, they won’t be as crispy.
Reheat them in the air fryer to get them crispier. They will soften if you heat them up in the microwave.
Keto Chicken Nuggets
You can even use this recipe without the toppings to make some homemade chicken nuggets. They don’t have to be formed into nugget shapes. You can roll them into meatballs and make chicken meatballs.
There are so many different ways to change up this recipe and still enjoy them as a low-carb and high-protein lunch.
Bite-Size Pizza
These chicken nuggets are so small, you can’t really fit a bunch of different toppings on them. You can still have fun and be creative with them!
Use different types of cheese to get different flavors. Extra sharp cheddar will give it a nice bite. If you like spicy foods, top each nugget with a slice of jalapeno. Finely chop up some olives and add them on top too.

INGREDIENTS:
Ground chicken
Egg
Grated parmesan cheese
Ground pork rinds
Italian seasoning
Shredded mozzarella cheese
Rao pizza sauce
Pepperoni
INSTRUCTIONS:
Preheat the oven to 400 degrees F.
In a large bowl, mix together ground chicken, egg, italian seasoning, and ½ of the parmesan cheese.
In a separate bowl, stir together ground pork rinds and remaining parmesan cheese.
Form the chicken mixture into small nuggets, roll in the pork rind mixture, then place on a prepared baking sheet. (I used parchment paper for easy removal).
Bake for approximately 25-30 minutes, or until nuggets are slightly brown and the chicken is cooked through.
Remove from the oven, layer each with pizza sauce, shredded mozzarella cheese, pepperoni and additional mozzarella.
Return to the oven for another 3-4 minutes, or until the cheese has melted.
