Ingredients
  

  • 1 1/2 cups Celery chopped
  • 2 Carrots peeled and chopped
  • 1/2 Onion chopped
  • 1 pound Shredded Chicken
  • 2 tbsp Butter
  • 3 tsp Minced Garlic
  • 1 tsp Lemon Zest
  • 2 tbsp Lemon Juice
  • 1/2 cup Heavy Whipping Cream
  • 4 cups Chicken Broth
  • 1 tsp Italian Seasoning

Instructions
 

  • Melt the butter in a pot over medium heat. 
  • Stir in the onions, carrots and celery. Saute until softened. 
  • Mix in the Italian seasoning, chicken, garlic, chicken broth, Lemon zest, lemon juice, Italian seasoning and salt and pepper to taste. 
  • Simmer uncovered for 15 minutes. 
  • Pour in the heavy whipping cream, and simmer for another 5 minutes. 
  • Serve garnished with chopped parsley.
