Creamy Low-Carb Lemon Chicken Soup

- 1 1/2 cups Celery chopped
- 2 Carrots peeled and chopped
- 1/2 Onion chopped
- 1 pound Shredded Chicken
- 2 tbsp Butter
- 3 tsp Minced Garlic
- 1 tsp Lemon Zest
- 2 tbsp Lemon Juice
- 1/2 cup Heavy Whipping Cream
- 4 cups Chicken Broth
- 1 tsp Italian Seasoning
Melt the butter in a pot over medium heat.
Stir in the onions, carrots and celery. Saute until softened.
Mix in the Italian seasoning, chicken, garlic, chicken broth, Lemon zest, lemon juice, Italian seasoning and salt and pepper to taste.
Simmer uncovered for 15 minutes.
Pour in the heavy whipping cream, and simmer for another 5 minutes.
Serve garnished with chopped parsley.
