    This lemon chicken soup has everything  you love about chicken soup, all brightened and enhanced by fresh lemon zest and lemon juice. 

    Creamy Low-Carb Lemon Chicken Soup

    If you’re feeling run down or you need something comforting to eat on a cold day, make a batch of this easy chicken soup. Don’t forget to top it with some fresh parsley. It adds natural earthy notes to the soup that brings out the other flavors in the Italian seasoning. 

    Creamy Chicken Soup 

    Creamy chicken soup is the perfect thing to add to your weekly meal prep. Store it in a spill-proof, airtight food storage container. My favorite kind is a mason jar with a screw-top lid. Then, keep it in the refrigerator for up to three days. 

    Creamy Low-Carb Lemon Chicken Soup

    I used heavy whipping cream to thicken the soup and make it more filling. If you need this to be dairy-free, I suggest using coconut cream/milk instead of dairy milk and ghee instead of butter. 

    Low-Carb Chicken Soup 

    This is also a really easy recipe to make in the slow cooker. Put everything except the heavy cream in the slow cooker and cook it on low for 6-8 hours. About 30 minutes before dinner, add the heavy cream, stir it, and let it simmer.

    Don’t add the heavy cream any earlier than that because dairy doesn’t do very well in the slow cooker.

    The best thing to serve with this filling and satiating chicken soup is some kind of low-carb bread. Keto bacon and cheese biscuits are savory and taste amazing with the soup.

    For something that has the same Italian seasonings, make some low-carb Italian breadsticks. They are really easy to bake and kids love them! 

    Any type of low-carb bread is really tasty when you dip it into this thick and creamy soup. 

    30-Minute Soup Recipe

    One of my favorite ways to save on food-prep time is to shred a rotisserie chicken and use that in the soup. This is also a wonderful way to use any leftover baked or roasted chicken you have in the refrigerator.

    Another way to speed up prep time is to chop your veggies a few days ahead of time too. Use frozen onions if you don’t have time to chop them up days in advance, because fresh onions will give your fridge quite a strong odor.

    Ingredients:

    Celery
    Carrots 
    Onion
    Shredded chicken
    Butter
    Minced garlic
    Lemon zest
    Lemon juice
    Heavy whipping cream
    Chicken broth
    Italian seasoning
    Salt and pepper
    Parsley for garnish

    Instructions:

    1. Melt the butter in a pot over medium heat.

    2. Stir in the onions, carrots and celery. Saute until softened.

    3. Mix in the Italian seasoning, chicken, garlic, chicken broth, Lemon zest, lemon juice, Italian seasoning and salt and pepper to taste.

    5. Pour in the heavy whipping cream, and simmer for another 5 minutes.

    • 1 1/2 cups Celery chopped
    • 2 Carrots peeled and chopped
    • 1/2 Onion chopped
    • 1 pound Shredded Chicken
    • 2 tbsp Butter
    • 3 tsp Minced Garlic
    • 1 tsp Lemon Zest
    • 2 tbsp Lemon Juice
    • 1/2 cup Heavy Whipping Cream
    • 4 cups Chicken Broth
    • 1 tsp Italian Seasoning

    Instructions
