Creamy Chicken Soup
Creamy chicken soup is the perfect thing to add to your weekly meal prep. Store it in a spill-proof, airtight food storage container. My favorite kind is a mason jar with a screw-top lid. Then, keep it in the refrigerator for up to three days.
I used heavy whipping cream to thicken the soup and make it more filling. If you need this to be dairy-free, I suggest using coconut cream/milk instead of dairy milk and ghee instead of butter.
Low-Carb Chicken Soup
This is also a really easy recipe to make in the slow cooker. Put everything except the heavy cream in the slow cooker and cook it on low for 6-8 hours. About 30 minutes before dinner, add the heavy cream, stir it, and let it simmer.
Don’t add the heavy cream any earlier than that because dairy doesn’t do very well in the slow cooker.

Another way to speed up prep time is to chop your veggies a few days ahead of time too. Use frozen onions if you don’t have time to chop them up days in advance, because fresh onions will give your fridge quite a strong odor.
