Ingredients
  

Almond Flour Cake

  • 3 cups Almond Flour
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 1/2 cup Butter melted
  • 6 large Eggs Room temperature
  • 1/3 cup Almond Milk
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Vanilla

Tres Leches

  • 2 cups Heavy Whipping Cream
  • 1 tbsp Butter
  • 1 tsp Vanilla
  • 1/4 cup Swerve Confectioner's Sugar Substitute

Icing

  • 1 cup Heavy Whipping Cream
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon plus extra for dusting

Instructions
 

  • Preheat the oven to 350 degrees.
  • Combine the ingredients for the cake, and blend until smooth.
  • Layer the cake batter in a well greased 9x13 baking dish.
  • Bake for 35-40 minutes, or until golden brown and cooked through.
  • While the cake is baking, add the butter and Swerve for the tres leches to a pot over medium heat on the stove.
  • Add in the heavy whipping cream, and simmer until thickened.
  • Remove from the heat, and stir in the vanill. Set aside.
  • When the cake is warm, poke holes in it with the tines of a fork.
  • Pour the tres leches mixture over the cake, and let it cool to room temperature.
  • In a mixing bowl, beat together the ingredients for the icing until smooth and creamy.
  • Spread the icing over the cake and serve dusted with cinnamon.
