I stayed true to the classic look, taste, and feel, all while keeping it low-carb. In fact, there are only four grams net carbs in each serving! This tres leches cake makes 16 slices.

If you want to freeze tres leches cake, I suggest freezing it without the icing on top. Then, you can thaw it in the fridge overnight, warm it back up, and add the icing last.
Gluten-Free Tres Leches Cake
To make tres leches cake gluten-free and low-carb, I used almond flour. Please, remember to use almond flour and not almond meal. They are sold next to each other in the store, so it’s easy to get them confused.
Almond flour is made by grinding up almonds without the skins. Almond meal contains those skins.
If you accidentally use almond meal, it will still work. Your cake will just have a grainy texture.

Ingredients:
For the cake:
Almond flour
Swerve confectioners sugar substitute
Butter
Eggs
Almond milk
Baking powder
Baking soda
Vanilla
For the tres leches:
Heavy whipping cream
Butter
Vanilla
Swerve confectioners sugar substitute
For the icing:
Heavy whipping cream
Swerve confectioners sugar substitute
Vanilla
Cinnamon + additional for dusting
Instructions:
Preheat the oven to 350 degrees.
Combine the ingredients for the cake, and blend until smooth.
Layer the cake batter in a well greased 9×13 baking dish. Bake for 35-40 minutes, or until golden brown and cooked through.
While the cake is baking, add the butter and Swerve for the tres leches to a pot over medium heat on the stove.
Add in the heavy whipping cream, and simmer until thickened. Remove from the heat, and stir in the vanill. Set aside.
When the cake is warm, poke holes in it with the tines of a fork.
Pour the tres leches mixture over the cake, and let it cool to room temperature.
In a mixing bowl, beat together the ingredients for the icing until smooth and creamy.
Spread the icing over the cake and serve dusted with cinnamon.

- 3 cups Almond Flour
- 1 cup Swerve Confectioner's Sugar Substitute

Icing
- 1 cup Heavy Whipping Cream
- 1/4 cup Swerve Confectioner's Sugar Substitute
- 1 tsp Vanilla
- 1/2 tsp Cinnamon plus extra for dusting
Instructions
