Ingredients
  

Keto Eggnog

  • 1 cup Heavy Whipping Cream
  • 1 cup Unsweetened Almond Milk
  • 1/3 cup Swerve Confectioner's Sugar Substitute you can add more if desired
  • 1/2 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 3 large Egg Yolks

Hot Chocolate

  • 1 cup Unsweetened Almond Milk
  • 1 cup Keto Chocolate Chips
  • 1 tsp Vanilla
  • Sugar-Free Whipped Cream if desired

Instructions
 

  • Add 1 cup heavy whipping cream, 1 cup of almond milk, cinnamon and nutmeg to a saucepan over medium low heat on the stove. Simmer until hot, but not boiling.
  • Whisk the egg yolks together in a bowl, and slowly add a bit of the warmed milk mixture to them, whisking continuously.
  • Once tempered, add the yolks into the saucepan along with the Swerve. Whisk to combine well.
  • Continue to simmer for about 8-10 minutes longer.
  • Let the eggnog cool and thicken.
  • Return the thickened eggnog to the stove over medium low heat.
  • Stir in the remaining cup of almond milk. Warm until hot but not boiling.
  • Remove the mixture from the heat, and add the chocolate chips and vanilla. Stir to combine until the chips have completely melted.
  • Serve immediately with sugar free whipped cream if desired.
