Low-Carb Shaved Brussels Sprouts With Cranberries

Ingredients
  

Salad

  • 1 pound Brussels Sprouts trimmed and shaved
  • 4 ounces Goat Cheese crumbled
  • 1/4 cup Unsweetened Dried Cranberries
  • 2 tbsp Crumbled Bacon Pieces
  • 1/4 cup Chopped Walnuts

Vinaigrette

  • 3 slices Bacon cooked and crumbled
  • 1 tbsp Reserved Bacon Grease
  • 1/2 Shallot chopped
  • 3 tbsp Red Wine Vinegar
  • 3 tbsp Olive Oil
  • 1/4 tsp Swerve Confefctioner's Sugar Substitute

Instructions
 

  • Cook the bacon and crumble it. Reserve 1 tbsp of the bacon grease.
  • Saute the shallot in the bacon grease until softened.
  • Add ½ of the cooked bacon, the shallot, red wine vinegar, olive oil and salt and pepper to taste to a small bowl, and stir to combine well.
  • In a large bowl, mix together the shaved brussels sprouts, goat cheese, cranberries, walnuts and bacon pieces.
  • Arrange the salad in a serving bowl or platter, and top with the remaining crooked and crumbled bacon.
  • Serve with the vinaigrette on the side or tossed into the salad, whichever you prefer.
