    Are Brussels Sprouts Keto 

    Both Brussels sprouts and cranberries are what I call moderately keto-friendly. If you control your portions, you can definitely enjoy them on a keto diet. But, when you make a salad out of them, combining a little bit of everything, the total carb count is actually lower per serving.

    In just one serving of this incredible side dish, there are only 4 grams net carbs. 

    Shaved Brussels Sprouts

    This salad is one of the best ones you’ll ever make! If you normally aren’t a fan of the cabbage-like texture of whole Brussells sprouts, then try shaving them into shreds. This turns them into what looks and tastes like a slaw salad. 

    Low-Carb Shaved Brussels Sprouts With Cranberries 

    The easiest way to shave Brussels sprouts is with a food processor. If you don’t have one, the next best thing is a mandolin slicer. You can shave them with a chef knife too, but that’s the most difficult option. 

    Brussels Sprouts and Cranberries

    This turned out to be a dairy-free recipe and it’s incredibly delicious! The goat cheese crumbles are delightfully tangy. I love how they enhance and round out the flavors of the cranberries, walnuts, and bacon.

    If dairy doesn’t bother you, you could use feta cheese instead of goat cheese. Sprinkle some shredded parmesan cheese on top too. Cheese is the easiest ingredient to change when you want to experiment with recipes.

    Save this recipe to your Pinterest board so that you can make the vinaigrette again. It’s divine. Red wine vinegar, oil, bacon, shallot, and sweeter with a sugar substitute. It’s savory, salty and sweet all at the same time.

    Mix everything together and store it in the refrigerator in an airtight container for up to three days. The flavors from the vinaigrette will seep deeper into the Brussels sprouts, making it taste stronger and better than ever.

    Here are the ingredients to make this low-carb shaved Brussels sprouts recipe. The exact measurements and instructions are in the printable recipe card, just a little below.

    Ingredients;

    For the salad:

    Brussels Sprouts
    Goat cheese crumbled
    Unsweetened dried cranberries
    Crumbled bacon pieces
    Chopped walnuts

    For the vinaigrette:

    Bacon cooked and crumbled
    Reserved bacon grease
    Shallot chopped
    Red wine vinegar
    Olive oil
    Swerve confectioners sugar substitute
    Salt and pepper 

    Instructions:

    Cook the bacon and crumble it. Reserve 1 tbsp of the bacon grease.
    Saute the shallot in the bacon grease until softened.

    Add ½ of the cooked bacon, the shallot, red wine vinegar, olive oil and salt and pepper to taste to a small bowl, and stir to combine well.

    In a large bowl, mix together the shaved brussels sprouts, goat cheese, cranberries, walnuts and bacon pieces.

    Serve with the vinaigrette on the side or tossed into the salad, whichever you prefer.

    Salad

    • 1 pound Brussels Sprouts trimmed and shaved
    • 4 ounces Goat Cheese crumbled
    • 1/4 cup Unsweetened Dried Cranberries
    • 2 tbsp Crumbled Bacon Pieces
    • 1/4 cup Chopped Walnuts

    Vinaigrette

    • 3 slices Bacon cooked and crumbled
    • 1 tbsp Reserved Bacon Grease
    • 1/2 Shallot chopped
    • 3 tbsp Red Wine Vinegar
    • 3 tbsp Olive Oil
    • 1/4 tsp Swerve Confefctioner's Sugar Substitute

    Instructions
