Sinfully sweet but wonderfully low-carb, Keto cheesecake stuffed strawberries are perfect for parties or sweet cravings.

Ingredients
  

  • 12 large Strawberries
  • 2 tbsp Crushed Keto Vanilla Wafer Crumbs
  • 1/4` cup Keto Chocolate Chips
  • 3 tbsp Butter softened
  • 5 ounces Cream Cheese softened
  • 2 tbsp Sour Cream
  • 1 tsp Vanilla
  • 1/3 cup Swerve Confectioner's Sugar Substitute

Instructions
 

  • Slice the tops off of the strawberries, and use a sharp knife or small round cookie cutter to cut the core out of each strawberry.
  • Add the butter, cream cheese, sour cream, vanilla and Swerve to a mixing bowl, and blend until smooth and creamy.
  • Pipe the cheesecake mixture into the strawberries.
  • Place the chocolate chips into a bowl that is microwave safe, and heat at 30 second intervals until melted completely.
  • Drizzle the chocolate over the strawberries, and sprinkle with the cookie crumbs.
  • Chill until the chocolate has set, and then serve.
