I used a secret ingredient in these strawberries that might surprise you – sour cream! Yes, when you mix sour cream with cream cheese, the result is a lighter and fluffier cheesecake filling.
Plus, it makes the strawberries taste even sweeter, adding more depth and a bit of tang to the cheesecake mixture.
Look for some keto vanilla wafer crumbs. This is what you’ll use around the outside of the strawberries to mimic graham cracker crust. If you can’t find any, you can leave them out.
It adds a wonderful taste and texture, but the strawberries taste delicious without them.

Ingredients:
Large strawberries
Keto vanilla wafer crumbs
Keto Chocolate chips
Butter
Cream cheese
Sour cream
Vanilla
Swerve confectioners sugar substitute
Instructions:
Slice the tops off of the strawberries, and use a sharp knife or small round cookie cutter to cut the core out of each strawberry.
Add the butter, cream cheese, sour cream, vanilla and Swerve to a mixing bowl, and blend until smooth and creamy.
Pipe the cheesecake mixture into the strawberries.
Place the chocolate chips into a bowl that is microwave safe, and heat at 30 second intervals until melted completely.
Drizzle the chocolate over the strawberries, and sprinkle with the cookie crumbs.
Chill until the chocolate has set, and then serve.
