Ingredients
  

  • 1/4 cup Green Onions chopped
  • 1/4 cup Matchstick Carrots
  • 4 cups Chicken Broth
  • 2 cups Cooked Cauliflower Rice
  • 2 cups Shredded Chicken
  • 2 large Eggs Lightly Beaten
  • Salt and White Pepper to taste

Instructions
 

  • Add the chicken broth to a pot, cover and bring to a boil over medium heat.
  • Once boiling, stir the broth in a circular motion, and slowly pour in the egg while continuing to stir.
  • Mix in the cauliflower rice, shredded chicken and salt and white pepper to taste.
  • Simmer until the chicken and rice are heated through.
  • Serve garnished with green onions and matchstick carrots.
