    There are two ways to save yourself time on this soup. First, grab a rotisserie chicken from the grocery store and shred it. It’s quick, easy, and tastes so good in the soup.

    You can also choose to use canned chicken in the soup. I love using canned chicken in chicken salad because it’s cheap and the chicken lasts for months in the pantry. 

    If you have any leftover bacon-wrapped chicken tenders, chop them up. The bacon will add some delicious saltiness to the soup.

    Ingredients:

    Green onions
    Matchstick carrots
    Chicken broth
    Cooked cauliflower rice
    Shredded chicken
    Eggs 
    Salt and white pepper 

    Instructions:

    Add the chicken broth to a pot, cover and bring to a boil over medium heat.

    Once boiling, stir the broth in a circular motion, and slowly pour in the egg while continuing to stir.
