Keto Sausage and Peppers Meatloaf

Ingredients
  

  • 1 pound Italian sausage
  • 1 pound Lean Ground Beef
  • 1 tbsp Olive Oil
  • 1/2 Red Bell Pepper
  • 1/2 Green Bell Pepper
  • 1.5 cups Low-Carb Marinara Sauce
  • 2 tbsp Sugar-Free Honey
  • Red pepper flakes to taste
  • 1 cup Pork Rind Crumbs
  • 1/2 Onion chopped
  • 1 large Egg
  • 2 tsp Minced Garlic
  • 1 tsp Italian Seasoning

Instructions
 

  • Preheat the oven to 350 degrees.
  • Add the oil to a skillet over medium heat.
  • Stir the peppers into the skillet, and saute until softened.
  • Pour in the marinara sauce, sugar free honey and red pepper flakes, and stir to combine.
  • Remove the mixture from the heat, and allow to cool slightly.
  • In a large mixing bowl, combine the ground beef, Italian sausage, pork rind crumbs, onion, egg, minced garlic, Italian seasoning, Salt and pepper to taste and a ⅓ of the marinara and pepper mixture.
  • Knead the mixture with your hands to combine well.
  • Form the meat mixture into a large loaf, and place into a 9x13 baking dish.
  • Spread the rest of the pepper sauce mixture on the top of the meatloaf.
  • Bake for 1 hour, or until cooked through completely.
