Meatloaf is one of those recipes that reminds you of your childhood. It’s a classic meal that will definitely fill you up, every single time.
It doesn’t take much effort to make it healthier. All I did was mix in some Italian sausage with the ground beef, and added some red and green bell peppers for nutrition and color. And to keep it low-carb (and gluten-free), I used pork rind crumbs instead of breadcrumbs.
It literally tastes like the meatloaf your mom used to make!
Keto Meatloaf
Meatloaf is one of the best recipes to make for your weekly meal prep! Not only does it store well, but it reheats really well, too!
I suggest keeping it in an airtight food storage container in the refrigerator for up to three or four days. Then, reheat it in the microwave.
This recipe makes eight servings, so you’ll have plenty to eat throughout the week.
Meatloaf With Green Peppers
There are a lot of ways to customize this recipe and make it taste just how you want it to! If you want it to be spicier, add some jalapeno or habanero peppers and spicy Italian sausage.
You can also make your own marinara sauce with tomato sauce and spices. If you use jarred marinara sauce, use the kind without any added sugar. My favorite brand is Rao’s homemade.
I used white onion, but yellow onion will work too. I suggest staying away from red onion because it tends to overpower the rest of the spices in the meatloaf.
What To Eat With Meatloaf
Serve this tasty meatloaf with your favorite sides. Some people like green beans with Italian foods, others prefer a chopped salad.
I like to serve this meatloaf with some keto everything bagel bites or keto Italian breadsticks. I just love rolls and bread with my meatloaf, so I always make a low-carb version.
You could also make some low-carb butternut squash noodles to serve with it! They are a bit more work, but taste delicious. Kids love loaded cauliflower rice balls because they are so crispy that they don’t even know they are eating veggies.

Pork rinds are a staple in my house. Not only do they make a salty and crunchy snack, but you can use them in so many recipes. I love using them instead of breadsticks in crispy recipes like chicken pizza bites.
They are also the perfect chip replacement and taste so good with some keto BLT dip.
Keto Sausage and Peppers Meatloaf Recipe
Below are the ingredients you’ll need to make this hearty keto meatloaf with sausage and peppers. Exact measurements and instructions are located in the printable recipe card just a little bit further below.

Ingredients:
Italian sausage
Lean ground beef
Olive oil
Red bell pepper
Green bell pepper
Low Carb marinara sauce
Sugar free honey
Red pepper flakes
Pork rind crumbs
Onion
Egg
Minced garlic
Italian seasoning
Salt and pepper
Instructions:
Preheat the oven to 350 degrees.
Add the oil to a skillet over medium heat.
Stir the peppers into the skillet, and saute until softened.
Pour in the marinara sauce, sugar free honey and red pepper flakes, and stir to combine.
Remove the mixture from the heat, and allow to cool slightly.
In a large mixing bowl, combine the ground beef, Italian sausage, pork rind crumbs, onion, egg, minced garlic, Italian seasoning, Salt and pepper to taste and a ⅓ of the marinara and pepper mixture.
Knead the mixture with your hands to combine well.
Form the meat mixture into a large loaf, and place into a 9×13 baking dish.
Spread the rest of the pepper sauce mixture on the top of the meatloaf.
Bake for 1 hour, or until cooked through completely.
