Ingredients
  

Keto Carrot Mug Cake

  • 1/2 cup Almond Flour
  • 3 tbsp Powdered Sugar Alternative
  • 1/2 tsp Cinnamon
  • 1/4 tsp Allspice
  • 1 tsp Baking Powder
  • 1/2 cup Shredded Carrots
  • 1 Egg
  • 2 tbsp Butter melted
  • 1 tbsp Milk

Keto Cream Cheese Frosting

  • 2 tbsp Cream Cheese
  • 2 tsp Keto Powdered Sugar Alternative
  • 1 tsp Milk optional, to make the frosting thinner

Instructions
 

  • In a bowl, whisk together the almond flour, powdered sugar, cinnamon, allspice and baking powder.
  • Combine the dry mixture with egg, melted butter and milk. Stir together until you have a smooth texture.
  • Fold in the shredded carrots.
  • Pour the mixture into a large mug (sprayed with nonstick cooking spray). Cook in the microwave for 3 minutes. Remove and let cool slightly.
  • In a small bowl, mix together the ingredients for Cream Cheese Frosting.
  • Top your cake with frosting and additional shredded carrots, if desired.
