If you don’t have powdered sugar substitute, put some granulated sugar substitute in a food processor. Process it for a few minutes – it will turn into powdered sugar!

Almond flour
Powdered sugar alternative
Cinnamon
Allspice
Baking powder
Shredded carrots
Egg
Butter
Almond milk
Cream Cheese Frosting:
Cream cheese
Powdered sugar alternative
Optional: 1 tsp almond milk, if you would like a thinner consistency
INSTRUCTIONS:
In a bowl, whisk together the almond flour, powdered sugar, cinnamon, allspice and baking powder.
Combine the dry mixture with egg, melted butter and milk. Stir together until you have a smooth texture.
Fold in the shredded carrots.
Pour the mixture into a large mug (sprayed with nonstick cooking spray). Cook in the microwave for 3 minutes. Remove and let cool slightly.
In a small bowl, mix together the ingredients for Cream Cheese Frosting.
Top your cake with frosting and additional shredded carrots, if desired.
