    This is the perfect springtime dessert! This single-serving keto carrot mug cake takes just a few minutes to make in the microwave.

    When you make a really delicious low-carb dessert, it can still be a struggle to only eat one serving. This is especially true when the dessert is as delicious as no-bake keto crème brulee cheesecake bars.

    That’s the beauty of making single-serving desserts! Since you’ll make this recipe in a coffee cup, there isn’t a way to overeat it.

    It’s the perfect thing to make when you’re sweet tooth is bugging you and you don’t want to go through the effort of making a huge batch of cookies or an entire cake. 

    Once you learn how to make a keto mug cake, the sky is the limit! You’ll be able to make lots of different flavors and varieties.

    It’s so much fun to heat up the mug cake and then just dig into it with a spoon! But if you want to feel extra fancy, spray some non-stick spray to the mug so that the carrot cake will slide out of your coffee cup.

    This recipe is a lot like my keto pumpkin carrot cake, but it’s single-serving and doesn’t include pumpkin. In both recipes, I used real carrots and a mixture of similar spices – cinnamon and allspice.

    If you don’t have powdered sugar substitute, put some granulated sugar substitute in a food processor. Process it for a few minutes – it will turn into powdered sugar!

    INGREDIENTS:
    Almond flour
    Powdered sugar alternative
    Cinnamon
    Allspice
    Baking powder
    Shredded carrots
    Egg
    Butter
    Almond milk

    Cream Cheese Frosting:
    Cream cheese
    Powdered sugar alternative
    Optional: 1 tsp almond milk, if you would like a thinner consistency

    INSTRUCTIONS:
    In a bowl, whisk together the almond flour, powdered sugar, cinnamon, allspice and baking powder.

    Combine the dry mixture with egg, melted butter and milk. Stir together until you have a smooth texture.

    Fold in the shredded carrots.

    Pour the mixture into a large mug (sprayed with nonstick cooking spray). Cook in the microwave for 3 minutes. Remove and let cool slightly.

    • 1/2 cup Almond Flour
    • 3 tbsp Powdered Sugar Alternative
    • 1/2 tsp Cinnamon
    • 1/4 tsp Allspice
    • 1 tsp Baking Powder
    • 1/2 cup Shredded Carrots
    • 1 Egg
    • 2 tbsp Butter melted
    • 1 tbsp Milk

    Keto Cream Cheese Frosting

    • 2 tbsp Cream Cheese
    • 2 tsp Keto Powdered Sugar Alternative
    • 1 tsp Milk optional, to make the frosting thinner
