Ingredients
  

Fried Chicken Nuggets

  • 1 1/2 pounds Boneless Skinless Chicken Thighs Cut into bite-sized pieces
  • 2/3 cup Almond Flour
  • 1/2 tsp Xanthan Gum
  • 6 tbsp Seltzer Water
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 2 large Eggs
  • Oil for frying

Keto Honey Butter Sauce

  • 4 tbsp Butter
  • 4 tbsp Sugar-Free Honey
  • 2 tbsp Soy Sauce

Instructions
 

  • In a mixing bowl, whisk together the almond flour, xanthan gum, baking powder, seltzer water, onion powder, garlic powder and eggs until well combined.
  • Heat several inches of oil in a pot or skillet over medium heat.
  • Dip the chicken into the batter, and place into the heated oil.
  • Fry the chicken pieces in batches until golden brown and cooked through. Drain on a paper towel lined plate.
  • Melt the butter in a large skillet over medium heat.
  • Add in the soy sauce and sugar free honey, and simmer until the mixture is bubbling and thickened.
  • Toss the chicken into the skillet, and coat well in the sauce before serving.
