So, to keep the carbs down, I used sugar-free honey. It’s a sticky sweetener that tastes just like authentic honey.
My favorite kind is Wholesome Yum sugar-free honey. It doesn’t have any funky aftertaste and really does replace honey perfectly.

There are a lot of different things I could have called this recipe. I could have called them homemade chicken nuggets or fried chicken bites.
Anytime that you make fried chicken, always use chicken thighs, not chicken breasts. When you fry chicken breasts, they get tougher. Chicken thighs stay juicier, so they are a much better cut to use in bite-sized nuggets.
Keto Honey Chicken
There are just three ingredients in the honey butter sauce – sugar-free honey, butter, and soy sauce. If you want to avoid all carbs, then I suggest using coconut aminos instead of soy sauce.
There could be traces of gluten in jarred soy sauce since it is part of the processing.
If you want to make it spicier, add a pinch of cayenne pepper or Sriacha to it. It doesn’t take much, so be careful.
TikTok Honey Butter Chicken
The TikTok honey butter chicken tastes the best when it is fresh out of the oven. Even so, you can still use it in your weekly meal prep.
Just remember that breaded chicken thigh bites will soften the longer they are in the refrigerator. To get the best texture, I suggest eating them within three days.

Boneless skinless chicken thighs cut into bite sized pieces.
Almond flour
Xanthan gum
Baking powder
Seltzer water
Onion powder
Garlic powder
Large eggs
Oil for frying
For the sauce:
Butter
Sugar free honey
Soy sauce
Instructions:
In a mixing bowl, whisk together the almond flour, xanthan gum, baking powder, seltzer water, onion powder, garlic powder and eggs until well combined.
Heat several inches of oil in a pot or skillet over medium heat.
Dip the chicken into the batter, and place into the heated oil.
Fry the chicken pieces in batches until golden brown and cooked through. Drain on a paper towel lined plate.
Melt the butter in a large skillet over medium heat.
Add in the soy sauce and sugar free honey, and simmer until the mixture is bubbling and thickened.
Toss the chicken into the skillet, and coat well in the sauce before serving.
