Keto Radish Salad With Eggs and Bacon

Ingredients
  

  • 1 1/2 pounds Radishes cut in half
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste
  • 1/3 cup Bacon Pieces
  • 2 Hard Boiled Eggs chopped
  • 1/3 cup Mayonnaise
  • 2 tbsp Dijon Mustard
  • 1/4 cup Chopped Green Onions
  • Keto Sweetener optional

Instructions
 

  • Preheat the oven to 400 degrees.
  • Drizzle the olive oil over the radishes, and season with salt and pepper to taste.
  • Place the radishes on a parchment or silicone mat lined baking sheet, and bake for 20 minutes, or until tender. Allow to cool.
  • Place the cooled radishes in a mixing bowl with the bacon, hard boiled eggs, mayonnaise, mustard, salt and pepper to taste and the sweetener if you are using it.
  • Stir to combine well.
  • Garnish with green onions before serving.
