Keto Bacon Wrapped Cheeseburger Meatloaf

Ingredients
  

  • 1 1/2 pounds Ground Beef
  • 1 cup Pork Rind Crumbs
  • 1 large Egg
  • 6 tbsp Ketchup divided
  • 1 tsp Swerve Brown Sugar Substitute
  • 3 tsp Minced Garlic
  • 2 tsp Worcestershire Sauce
  • 1 tsp Onion Powder
  • 1 tsp Paprika
  • 1 pound Bacon
  • 2 cups Colby Jack Cheese shredded

Instructions
 

  • Heat the oven to 350 degrees.
  • Add the ground beef, pork rind crumbs, egg, 2 Tbsp of the ketchup, Swerve, garlic, worcestershire sauce, onion powder, paprika and salt and pepper to taste to a mixing bowl, and knead to combine well.
  • Place half of the meat mixture into the bottom of a 9x13 well greased baking dish, and form it into the shape of a loaf. Form an indentation down the center of it.
  • Press the cheese into the center of the meatloaf.
  • Form the remaining meat mixture over the cheese, and reshape the mixture into a loaf.
  • Stir together the remaining ketchup and brown sugar substitute.
  • Brush the mixture over the top of the meatloaf.
  • Wrap the meatloaf in the strips of bacon, tucking them into the bottom of the meatloaf as you do.
  • Bake for 1 hour or until the bacon is crispy and the meat is cooked through.
