    Make meatloaf your favorite meal again! This keto bacon wrapped meatloaf has an incredible cheese filling. It’s the best way to turn a boring meal into something fun.

    What Is Meatloaf 

    Meatloaf is a delicious entree that feeds up to eight people. Traditional meatloaf usually includes breadcrumbs, eggs, and spices. These ingredients hold the meat together and help it bake into a loaf shape. Then, it’s sliced and served. 

    Keto Bacon Wrapped Cheeseburger Meatloaf

    To make a keto-friendly meatloaf, replace the breadcrumbs with pork rind crumbs. They add the same structure to the meatloaf as breadcrumbs. You’ll also need to use sugar-free ketchup. Read the ingredients label because a lot of brands sneak sugar or high fructose corn syrup into it. 

    I took this classic idea and gave it a fun little twist. I added a cheese filling and wrapped the entire thing in bacon. The result is a cheeseburger meatloaf with crispy bacon on the outside.

    Keto Bacon Wrapped Cheeseburger Meatloaf Ingredients

    • Ground Beef 
    • Pork Rind Crumbs
    • Egg
    • Ketchup 
    • Swerve Brown Sugar Substitute 
    • Minced Garlic 
    • Worcestershire Sauce 
    • Onion Powder 
    • Paprika
    • Bacon 
    • Colby Jack Cheese

    Keto Bacon Wrapped Cheeseburger Meatloaf

    • Ground Beef: You can make this with a mixture of ground beef and pork, or use turkey and chicken. 
    • Minced Garlic: Use garlic powder instead. 
    • Onion Powder: Use dried minced onion. 
    • Bacon: Turkey bacon is a good substitute. 

    Best Cheese For Cheeseburger Meatloaf 

    The melted cheese filling makes this meatloaf taste so incredible! It takes it from good to “oh my goodness amazing!” I used Colby Jack cheese to give the cheese filling the boldest flavors.

    You could also use a mixture of sharp cheddar cheese and pepperjack cheese. In fact, the Pepper Jack cheese will give the filling a bit of heat. 

    Meatloaf Sides

    Serve the bacon wrapped meatloaf with your favorite low-carb side dishes. You can never go wrong with some steamed veggies and Keto bacon and cheese biscuits. Or make keto everything bagel bites or keto Italian breadsticks on the side.  I just love rolls and bread with my meatloaf, so I always make a low-carb version.

    Kids love loaded cauliflower rice balls because they are so crispy and fun to eat! And if you have some bacon left over, make some bacon wrapped pickles. They are so tasty that they make the perfect snack. 

    Storing It

    Add the cheeseburger meatloaf to your weekly keto meal prep. Store the meatloaf in slices in an airtight container.

    They will stay fresh in the refrigerator for up to three days. You can freeze the meatloaf, too.

    Keto Bacon Wrapped Cheeseburger Meatloaf

    Store the cooked meatloaf in an freezer-safe food storage bag and keep it in the freezer for up to six months. 

    Making It

    Here are the step-by-step pictures of the process that you’ll follow to make this filling and delicious keto bacon wrapped meatloaf. All of the ingredients and instructions are located in the printable recipe card just a little bit further below.

    Prep Time: 10 minutes
    Cook Time: 1 hour
    Servings: 8
    Net Carbs: 2 net carbs per serving

    Directions

    Pork Rind Crumbs

    Heat the oven to 350 degrees. Add the ground beef, pork rind crumbs, egg, 2 Tbsp of the ketchup, Swerve, garlic, worcestershire sauce, onion powder, paprika and salt and pepper to taste to a mixing bowl, and knead to combine well.

    Forming the meat mixture into a loaf shape

    Place half of the meat mixture into the bottom of a 9×13 well greased baking dish, and form it into the shape of a loaf. Form an indentation down the center of it.

    Adding the cheese to the meatloaf

    Press the cheese into the center of the meatloaf.

    Adding ketchup to the outside of the meatloaf

    Form the remaining meat mixture over the cheese, and reshape the mixture into a loaf. Stir together the remaining ketchup and brown sugar substitute.

    Brush the mixture over the top of the meatloaf.

    Adding raw bacon to the outside of the meatloaf

    Wrap the meatloaf in the strips of bacon, tucking them into the bottom of the meatloaf as you do.

    Bake for 1 hour or until the bacon is crispy and the meat is cooked through.
