Ingredients
  

Cupcakes

  • 2 cups Almond Flour
  • 4 large Eggs
  • 1/2 cup Almond Milk
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 3 tsp Baking Powder
  • 1 tsp Vanilla Extract

Cream Cheese Frosting

  • 6 ounces Cream Cheese softened
  • 6 tbsp Butter softened
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 1/2 tsp Vanilla Extract

Topping

  • 8 Sugar-Free Reese's Peanut Butter Mini Cups
  • Sugar-Free Sprinkles

Instructions
 

  • Preheat the oven to 350 degrees.
  • Place all of the ingredients for the cupcakes into a mixing bowl, and blend until smooth.
  • Pour the batter into 8 sections of a muffin tin that have been lined with cupcake liners.
  • Bake for 25 minutes, or until cooked through.
  • Let the cupcakes cool to room temperature.
  • Beat together the icing ingredients in a mixing bowl until light and fluffy.
  • Ice the cupcakes.
  • Unwrap the Reese’s Cups, and place one on top of each cupcake.
  • Put a little dot of icing on the tip of each peanut butter cup.
  • Add sprinkles to the top of the cupcakes before serving.
