Birthday parties can feel so frustrating when you’re on the keto diet. Do you just suffer, refusing to eat any sweets? Or should you pay a bunch of money to try and find a baker that makes keto-friendly cupcakes?
The best option is to make your own cupcakes at home. These keto-friendly cupcakes are so easy to make, that you’ll be surprised they are low-carb.
Keto cupcakes are gluten-free, made from almond flour and sugar substitute. Then, they are topped with a keto cream cheese frosting and garnished with a keto-friendly peanut butter cup.
There are 5 grams net carbs in each cupcake, and this recipe makes 8 cupcakes.

Keto Cupcakes With Almond Flour
In order to recreate your favorite cupcakes, I used almond flour with baking powder. Use almond flour, not almond meal. If you use almond meal, the cupcakes will taste grainy.
Can you use coconut flour to make keto cupcakes? Yes, you can. But, I wouldn’t try to swap it with the almond flour in this recipe.
Coconut flour absorbs more moisture, so you’ll have to add more eggs and almond milk to prevent the cupcakes from being too dry.
Keto Frosting
The low-carb cream cheese frosting is so delicious, you’ll find new ways to use it in other desserts! The best part about it is that there are just four simple ingredients – cream cheese, butter, Swerve confectioner’s sugar substitute, and vanilla.
A few tips: make sure the cream cheese and butter is sufficiently soft before trying to mix them together. I also suggest using a stand mixer – it’s so much easier and faster than making it by hand.
And if you want to change the flavor, use a different type of extract. Use almond or peppermint extract instead of vanilla.

How To Store Cupcakes
The best way to store the cupcakes is to store the frosting and the cupcakes separately. Place the unfrosted cupcakes in an airtight container and keep them at room temperature and they will stay fresh for about a week.
Keep the frosting in another airtight container. Store it in the refrigerator for up to three days.
Making Them

Net Carbs: 5 net carbs per cupcake
Directions
Preheat the oven to 350 degrees.
Place all of the ingredients for the cupcakes into a mixing bowl, and blend until smooth. Pour the batter into 8 sections of a muffin tin that have been lined with cupcake liners.
Bake for 25 minutes, or until cooked through. Let the cupcakes cool to room temperature.
Beat together the icing ingredients in a mixing bowl until light and fluffy.
Ice the cupcakes.
Unwrap the Reese’s Cups, and place one on top of each cupcake.
Put a little dot of icing on the tip of each peanut butter cup.
Add sprinkles to the top of the cupcakes before serving.
