Ingredients
  

  • 2 pounds Boneless Skinless Chicken Thighs cut into pieces
  • 1/3 cup Red Onion finely chopped
  • 2 tbsp Olive Oil
  • 1 Chipotle Pepper in Adobo Sauce chopped
  • 2 tbsp Adobo Sauce
  • 2 tsp Minced Garlic `
  • 1/2 tsp Cumin
  • 1 tsp Oregano
  • 3 tsp Ancho Chili Powder

Instructions
 

  • Place the chicken into a mixing bowl.
  • Add the remaining ingredients into the mixing bowl with the chicken, and toss to combine well.
  • Marinate for 4 hours.
  • Spread the chicken onto a parchment or silicone mat lined baking sheet.
  • Preheat the oven to 400 degrees.
  • Bake for 20-30 minutes until cooked through.
  • Broil for 1-2 minutes to make the edges crispy if desired.
