    What Is Chipotle Chicken 

    Just like the name implies, this recipe is a near-perfect copycat of Chipotle chicken from the popular restaurant. It’s easier than you might think to make Chipotle chicken at home.

    You just need a bunch of spices! What really gives it the iconic flavor is the Chipotle pepper in adobo sauce. Look in the International food section of the grocery store, but don’t skip this ingredient.

    Once you have all the ingredients,  you’re ready to make chicken that will taste just as good on it’s own as it does on top of cauliflower rice, in a low-carb tortilla, or on top of an avocado.  

    Shopping List

    The ingredients you need in order to make Keto Chipotle Chicken

    • Boneless skinless chicken thighs cut into pieces
    • Finely chopped red onion
    • Olive oil
    • Chipotle pepper in adobo sauce chopped
    • Adobo sauce
    • Minced garlic
    • Cumin
    • Oregano
    • Ancho chili powder
    • Salt and pepper to taste

    Keto Chipotle Chicken With shredded Cheese

    Below are a few common ingredient swaps you can make: 

    • Chicken breast instead of chicken thighs
    • Yellow or white onion instead of red onion 
    • Smoked paprika instead of Ancho chili powder
    • Add sliced jalapeno to make it spicier 

    Best Type Of Chicken To Use

    Whenever you bake or fry chicken, it’s always best to use dark meat instead of white meat. Chicken thighs will stay juicier and won’t dry out as quickly.

    If you only have chicken breast or breast tenders, then have some extra sauce on the side that you can drizzle on top in case it is a tad too dry.

    It tastes delicious with keto salsa verde chicken enchiladas. And you can never go wrong with some keto tortilla chips, queso dip, and some tasty guacamole!

    This is the perfect way to cook chicken for meal prep or to eat it in leftovers throughout the week.

    How To Meal Prep

    To meal prep with chipotle chicken, follow the directions in the recipe card and then let it coo to room temperature. Store it in an airtight food storage container in the refrigerator for up to three days.

    How To Freeze

    This chicken freezes really well! Store it in a freezer-safe bag or container. It will stay fresh in the freezer for up to six months. 

    Making It 

    Here’s the list of ingredients that you’ll need to make this filling and delicious keto chipotle chicken recipe. The exact measurements and instructions are located in the printable recipe card just a little bit further below.

    Prep Time: 15 minutes
    Cook Time: 20-30minutes
    Servings: 6
    Net Carbs: 1 net carbs per serving

    Place the chicken into a mixing bowl.

    Add the remaining ingredients into the mixing bowl with the chicken, and toss to combine well.

    Olive Oil

    Marinate for 4 hours.

    Spread the chicken onto a parchment or silicone mat-lined baking sheet.

    Preheat the oven to 400 degrees. Bake for 20-30 minutes until cooked through. Broil for 1-2 minutes to make the edges crispy if desired.

    • 2 tbsp Olive Oil
    • 1 Chipotle Pepper in Adobo Sauce chopped
    • 2 tbsp Adobo Sauce
    • 2 tsp Minced Garlic `
    • 1/2 tsp Cumin
    • 1 tsp Oregano
    • 3 tsp Ancho Chili Powder

    Instructions
     

    • Place the chicken into a mixing bowl.
    • Add the remaining ingredients into the mixing bowl with the chicken, and toss to combine well.
    • Marinate for 4 hours.
    • Spread the chicken onto a parchment or silicone mat lined baking sheet.
