Just like the name implies, this recipe is a near-perfect copycat of Chipotle chicken from the popular restaurant. It’s easier than you might think to make Chipotle chicken at home.
You just need a bunch of spices! What really gives it the iconic flavor is the Chipotle pepper in adobo sauce. Look in the International food section of the grocery store, but don’t skip this ingredient.
Once you have all the ingredients, you’re ready to make chicken that will taste just as good on it’s own as it does on top of cauliflower rice, in a low-carb tortilla, or on top of an avocado.

- Boneless skinless chicken thighs cut into pieces
- Finely chopped red onion
- Olive oil
- Chipotle pepper in adobo sauce chopped

Whenever you bake or fry chicken, it’s always best to use dark meat instead of white meat. Chicken thighs will stay juicier and won’t dry out as quickly.
If you only have chicken breast or breast tenders, then have some extra sauce on the side that you can drizzle on top in case it is a tad too dry.
