Cut the cauliflower into florets, and boil until crisp tender. Rinse under cold water and drain well.
Preheat the oven to 400 degrees.
Add the cauliflower, butter, cream cheese, chives, minced garlic and salt and pepper to taste to a blender or food processor. Blend until smooth.
Spread the cauliflower mash into a greased casserole dish, and top with the cheese and bacon.
Bake for about 5 minutes, or until the cheese melts.
Garnish with green onions and serve.
