All of your favorite things about loaded potatoes are in this recipe. In fact, it tastes so good (and has so many toppings) that your kids might actually enjoy eating cauliflower!
I found that the best way to entice my kids to eat their veggies is to smother them in cheese, some kind of sauce, or lots of other tasty foods (like bacon). This loaded cauliflower mash is rich and cheesy and has bacon in it, so it’s definitely a winner in our house!
Loaded Cauliflower Mash
This is a really versatile recipe. In fact, you can make the cauliflower mash as a base and set up a bar full of topping ideas and let people build their own loaded cauliflower bowl.
Bacon, cheese, and chives are the toppings I suggested in the recipe. You could also offer hot sauce, crumbled chorizo, jalapeno peppers, or chili as topping options.
If you need to make this recipe dairy-free, use soft goat cheese instead of cream cheese and ghee or coconut oil instead of butter.
How To Make Mashed Cauliflower Creamy
Cream cheese is the secret to a really creamy mashed cauliflower. Just add a little more cream cheese if you want the cauliflower mash to be thicker, creamier, or richer.
I also discovered that removing as much water as possible from the boiled cauliflower florets helps the cauliflower mash stand up better. Place the cauliflower in a cheesecloth and squeeze it tightly, draining as much water as you can.
Use a blender or food processor to mix everything together. The better you mix it together, the creamier it will be.
How To Store Mashed Cauliflower
If you want to eat this mashed cauliflower later (like in your meal prep) I suggest storing the cauliflower separately from the toppings. Keep everything in separate airtight container and refrigerate them for up to three days.
Reheat the mashed cauliflower in the microwave. It might solidify in the refrigerator, but heating it back up will make it soft and creamy again.

Loaded Cauliflower Mash Recipe

Ingredients:
Large head of cauliflower
Slices of bacon
Cream cheese
Dried chives
Green onions
Minced garlic
Shredded cheddar cheese
Butter
Salt and pepper
Instructions:
Cut the cauliflower into florets, and boil until crisp tender. Rinse under cold water and drain well.
Preheat the oven to 400 degrees.
Add the cauliflower, butter, cream cheese, chives, minced garlic and salt and pepper to taste to a blender or food processor.
Blend until smooth.
Spread the cauliflower mash into a greased casserole dish, and top with the cheese and bacon.
Bake for about 5 minutes, or until the cheese melts.
Garnish with green onions and serve.
