Preheat the oven to 400 degrees. Prepare a 9x13 casserole dish with nonstick cooking spray.
Slice zucchini in half lengthwise and scoop out the middle of the vegetable with a spoon leaving about 1/2 inch along the outside creating a “boat.”
Place the zucchini into the casserole dish and brush with olive oil. Season with salt and black pepper.
Put the casserole dish into the oven and bake for 8 to 10 minutes or until slightly softened.
Carefully remove the casserole dish from the oven. Spoon the pulled pork into the zucchini boats, pressing down. Pile extra mixture on top until the boats are overflowing slightly. Top with the cheese.
Bake for 15 to 20 minutes until the cheese is melted and zucchini is tender. Garnish, if desired, with sliced green onions.
