Making your own keto pulled pork is so easy. All you do is cook a pork shoulder in a slow cooker with a bottle of your favorite sugar-free BBQ sauce. Let that cook on low for 10 hours or so and by the end, it will be fork-tender.

The BBQ sauce really soaks into the meat when you do it this way too. If you happen to see some sugar-free prepared pulled pork at the grocery store, pick it up. I always look at the nutrition facts first because most BBQ sauces are filled with sugar.
Whenever I make pulled pork, I used pork shoulder roast. I love how much meat you can get with it and how it tastes when you shred it. I’ve heard of other people using pork loin because it is a leaner cut of pork.
Both choices work really well.
Easy Stuffed Zucchini Boats
Cutting zucchini into boats is really easy. Don’t peel them. The skin actually protects the zucchini as it bakes in the oven. Just slice the zucchini in half lengthwise – along the longest sides.

Then, use a spoon to scoop out the middle of the zucchini, including the seeds. This will create a boat in the middle where you can place the pork and cheese.

In order to keep this recipe simple, I just used cheddar cheese. Cheese is one ingredient that you can really be creative with!
Make the zucchini boats a bit spicier by using some cheese made with jalapenos.

Pepper jack is really easy to find and will taste really good with the pulled pork. Garnish the pulled pork stuffed zucchini boats with some chopped green onions and you are ready to eat!
Pork Stuffed Zucchini Boats
These zucchini boats are a complete meal by themselves. You don’t really need to add much to the table to make it a complete meal. Some low-carb everything bagel breadsticks will taste amazing with these saucy boats.

Or add some mashed cauliflower on the side. It doesn’t take much to really make this a tasty and filling dinner or lunch.
Can You Freeze Zucchini Boats
Yes, you can definitely freeze zucchini boats. Here’s how I suggest freezing them.
First, cook and assemble them, just like in the recipe card below. Then, place them on a baking sheet in a single layer. Place the baking sheet in the freezer for about an hour – basically, long enough for the zucchini boats to freeze.

After they are frozen, individually wrap each one in foil and place the zucchini boats in a freezer-safe food storage bag. The zucchini boats will stay fresh in the freezer for up to 6 months.

- Olive oil
- Salt and black pepper
- Prepared pulled pork (you can use your own recipe or this one
- Shredded cheddar cheese
- Sliced green onions
1. Preheat the oven to 400 degrees. Prepare a 9×13 casserole dish with nonstick cooking spray.
2. Slice zucchini in half lengthwise and scoop out the middle of the vegetable with a spoon leaving about 1/2 inch along the outside creating a “boat.” Place the zucchini into the casserole dish and brush with olive oil. Season with salt and black pepper.

3. Put the casserole dish into the oven and bake for 8 to 10 minutes or until slightly softened.

4. Carefully remove the casserole dish from the oven. Spoon the pulled pork into the zucchini boats, pressing down.
5. Pile the extra mixture on top until the boats are overflowing slightly. Top with the cheese.

6. Bake for 15 to 20 minutes until the cheese is melted and zucchini is tender. Garnish, if desired, with sliced green onions. Pin for later!
