Heat the ground beef in a skillet over medium high heat, and saute for 3 minutes.
Add in the onions, and saute until the onions have softened and the meat is completely browned. Drain any excess grease.
Reduce the heat to medium low, and stir in the garlic, tomato paste, Italian seasoning and salt and pepper to taste.
Pour in the diced tomatoes and roma tomatoes. Stir to combine.
Sprinkle in the Swerve and cover to simmer for 10 minutes.
Mix in the parmesan cheese, and remove the sauce to set aside.
In a clean skillet, heat the palmini noodles until warmed through.
Top with the sauce mixture,
Place the two slices of fresh mozzarella beside each other on top of the sauce.
Add one half of a black olive to the center of each mozzarella slice.
