Ingredients
  

  • 3 cups Cauliflower Rice cooked
  • 2 large Boneless Skinless Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 tsp Chili Powder
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1 Avocado diced
  • 1/2 cup Cherry Tomatoes halved
  • 1/4 cup Red Onion sliced thinly
  • Avocado Ranch Dressing for garnish

Instructions
 

  • Preheat an indoor or outdoor grill.
  • Drizzle the chicken breasts with olive oil, and season with the chili powder, paprika, cumin and salt and pepper to taste.
  • Grill the chicken until done to your liking.
  • Divide the cauliflower rice into 4 serving bowls.
  • Add avocado, red onion and cherry tomatoes to each bowl.
  • Slice the grilled chicken, and add a serving to each rice bowl.
  • Drizzle with avocado ranch dressing before serving.
